ADRIANA CAVATAPPI WITH TUNA AND VEGETABLES

Ingredients

800 g Adriana Cavatappi
1 large can of tuna (ideally whole pieces)
2 medium zucchinis
1 large red pepper
2 medium onions
4 tablespoons tomato puree
olive oil
basil
salt and freshly ground pepper

Description

If you like tuna, this recipe is for you. Cook the pasta in salted water according to the instructions on the package and strain, reserving some of the cooking water. To prepare the sauce, heat the olive oil in a saucepan and sauté thinly sliced onions and pepper for about 5 minutes, or until the vegetables are half cooked. Add the tomato puree and sauté again briefly. Wash the zucchini, but do not peel it; if it is too big, remove the seeds. Then, cut the zucchini into small cubes and add to the saucepan with the other vegetables. Finally, add tuna and reserved pasta water, and cook until incorporated. Season with salt, pepper, and chopped fresh basil. Combine cooked pasta with the sauce and serve immediately. Enjoy.
