ADRIANA PENNE WITH TUNA, MUSHROOMS AND SOUR CREAM

400 g sour cream
12 button mushrooms
600 g Adriana Penne
salt and freshly ground pepper
4 garlic cloves
2 shallots
4 tablespoons olive oil
150 g tuna
100 g fresh spinach
freshly grated Parmesan cheese

Description

Do you fancy tuna and don’t have too much time to spare? Enjoy Adriana Penne with tuna, mushrooms, and sour cream. Cook the pasta in salted water according to the instructions on the package and strain, reserving a little of the cooking water. Finely chop the garlic and slice the shallots. Heat the olive oil in a saucepan and slowly sauté the garlic and shallots until translucent. Add reserved pasta water and turn the heat down. Gradually add cooked pasta, sour cream, tuna; combine well. Season with freshly ground pepper. If the sauce is too thick, add more water. Add fresh spinach leaves and cook briefly. Cut off the stems from mushrooms and cut mushroom caps into quarters. Heat the olive oil in a saucepan and add mushroom caps; sauté quickly and season with salt and freshly ground pepper. Serve spinach and mushrooms on top of the pasta with freshly grated Parmesan cheese. Penne with tuna, mushrooms and sour cream. Who could resist when it's so easy to prepare?
