4 tablespoons olive oil
500 g minced beef
2 garlic cloves

800 g Adriana Gobetti Rigati

6 tablespoons dry white or rosé wine
275 g red and yellow cherry tomatoes
Juice and rind of one lemon
freshly grated Parmesan cheese
flat-leaf parsley for garnish
salt and freshly ground pepper

Cook for about 6-8 minutes, or until the meat browns. Add tomato puree and wine, season with salt and pepper, and cook for 5-6 minutes, stirring occasionally. Add tomatoes and olives and cook for a few more minutes. Cook the pasta in salted water according to the instructions on the package, strain, and flavor with olive oil, lemon juice, and rind. Combine with sauce, serve with freshly grated Parmesan cheese, and garnish with spring of parsley. You have finished an unusual Bolognese with an unexpected taste.
